Abstract

The work presented in this paper focuses on the analysis of processes the fruit-and-vegetable supply chain. It is in a context of innovation and new technologies where the project is defined and initiated due to the need for improvements in logistics and transport of perishable goods. The paper presents the operational model of enterprises currently working within the fruit-and-vegetable supply chain, and an analysis of the collaborative network will be carried out throughout the enterprises or agents integrating it, as well as on the processesperformed by each of these agents.
