La Unidad de Microbiología y Seguridad Alimentaria basa sus estudios en el control de los microorganismos patógenos y alteradores presentes en los alimentos. Para ello se centra en la optimización de los tratamientos térmicos que se aplican actualmente en la industria alimentaria para conservar alimentos, en la investigación de otras tecnologías emergentes que se aplican o se pueden aplicar en un futuro en la industria alimentaria con este mismo fin y en la valoración del riesgo microbiológico asociado al consumo de alimentos.
